Reason is that these positions do not stay vacant for long periods of time due to demand. Any aircraft that is grounded for long periods of time costs an airline company way too much money from lost income.
Therefore there is a sense of urgency to filling any aircraft mechanic position that becomes vacant.
On the other side however is the fact that there are also large quantities of passenger and cargo airlines, Defence forces and private organisations that require these very valuable and important people. Without their skills nothing would fly at all.
